Eat // GP's Green Goddess Salad
I am not a foodie. I'm not a particularly good cook, either. But as part of my recent effort to eat clean, I've drastically increased my fruit/vegetable intake. The easiest way for me to do that is to eat salads. It's All Good is a beautiful cookbook. I'd like to live in that book. And raise chickens! And wear buttondowns and jean shorts and no makeup and look amazing. But, I digress.
To be honest, the majority of the recipes are beyond my skill level and some contain ingredients that I find particularly intimidating (almond flour?). That being said, there are a few dishes in here that are amazing. I make this salad and dressing at least three times a week. I substitute Fage 2% (which I keep a tub of at all times for smoothies) for the goat's milk yogurt. I also substitute frozen corn for fresh. I'll pop it in the microwave and then refrigerate for a few minutes. As salads go, its a bit labor intensive...but totally worth it for me. Do you have a favorite salad? I'd love to hear.
